taking it easy cooking wise as we prepare for a celebration and for family visiting at the end of the week for L's baptism.
monday : leftover meatlovers lasagna. this was good, but not sure it was worth all of the effort. these days i want a lot of flavor if i'm investing a good chunk of time into something. it wasn't hard to prepare, just more time intensive which is why it was a weekend meal. next time i want to switch out the ricotta for another cheeze as it just didn't provide that much flavor. i'll also make it in two smaller dishes as it's a LOT of lasagna.
tuesday : enchilada casserole. my last freezer meal from what i made before L was born. perfect for this week and an evening date with the swings at the park i'm sure.
wednesday : french dip sandwiches. we haven't had this in awhile and andy will likely fall over when he walks through the door that night to see what's for dinner. i always said i wasn't a fan of soggy sandwiches, but will admit these are really that good. they even make for great leftovers.
thursday : meatballs in peanut chile sauce. andy's sister arrives that afternoon and hopefully she'll think this is as good as we do. plus it's an easy dinner with minimal cleanup. my cousin sara tried this last week and told me it met rave reviews at her house which brought this one to the front of my mind again.
friday : pizza. this time shared with both of our families. they all know we have pizza every friday so i'm sure they're already expecting it. think i'll be placing an order this week though.
last week's new recipe reviews
spinach and cheese strata. SO GOOD. we cleaned this up without any trouble. the bread on top was fantastic. i'll definitely be making this again.
slow cooker cheese enchilada stack. it was okay. nothing earth shattering but it didn't have a whole lot of wow factor for the flavor. the next time i made it i'd add green chiles to the mix.
