for some reason, i decided to make an easier menu than usual for this week. no reason in particular. although likely it has something to do with C wanting to be outside every moment of the day. so thus, a menu that lets us finish dinner and head outside.
monday : porcupines. this was pulled out of the freezer – a dish my mom had made for us when she was visiting last month. porcupines are a meatball type dish in a tomato sauce that has rice in the meatballs. always a hit. C was gobbling them up.
tuesday : breakfast. we'll see what special request C has up her sleeve for tomorrow and let her choose. i usually give her two options and let her decide.
wednesday : maple dijon chicken. i was looking through my make it fast cook it slow cookbook on saturday and found this one. i have sweet potatoes to use up and this is a great opportunity to use them.
thursday : coconut beef. another recipe found while flipping through the same cookbook. i really should buy more than one can of coconut milk at a time as i seem to use it fairly frequently.
friday : pizza. i've created a monster with letting C help make pizza two weeks ago. every time i head to the kitchen, she's hollaring "help! help!" definitely not a complaint, however sometimes a trip to the kitchen doesn't mean i'm going to make a meal.
last week's new recipe review
spring vegetable couscous with chicken – this was from this month's issue of everyday food. light and fresh. i made this after C was in bed as we had been outside for longer than intended. andy and i both loved it. it made enough for two dinner portions and a lunch for me the next day. next time i'll use more lemon juice though.
