definitely been in a full on cooking/baking mode the past week. lots of goodies. probably not helping to lose these last ten pounds, but so yummy.
since monday is almost over, i won’t be including it. i didn’t get to make the steak sandwiches last week so instead did a bit of a deconstruction of them to use the ingredients. after C was in bed, i broiled the steak and sauteed the other ingredients to add on top. served it alongside baked sweet potatoes which were on sale last week and voila, dinner.
tuesday : spring vegetable couscous with chicken. from the latest everyday food mag. looks to be super quick and easy. if the weather is nice, i’m sure we’ll be outside so it should be perfect.
wednesday : sloppy joes. we haven’t had these in awhile, and again a quick one to let us be outside quickly before having to come back in for bath time.
thursday : black bean tostadas with corn relish. C and i love these both for dinner and for lunch the next day. a fabulous meatless meal.
friday : pizza. pizza friday was a big success last week with making our own and C assisting as my sous chef. looking forward to doing it again this week. i’ll have to share photos of our adventure.
last week’s new recipe review
baked oatmeal – a definite hit for andy. something easy for him to eat on the way into work each morning. truly portable oatmeal. i used raisins in last week’s batch and made a new batch this week and used cranberries. it was given the seal of approval as well.
old school fudge brownies – holy brownie goodness! so good. especially with a big glass of milk. these were gone fast. want to make again soon.
fresh spinach mushroom frittata – instead of leftovers on thursday, i made this for C and i for dinner. super easy and a great way to use the fresh produce in the fridge. loved the use of parmesan cheese on top. served with strawberries, it was the perfect light supper.
