Here’s what we’ll be eating this week:
Meatless Monday: Huevos Rancheros Waffle Fries. It’s breakfast meets bar food and it’s delicious! Packed full of protein from both eggs and black beans, this meatless dish will definitely leave you satisfied.
I’ve selected Monday as a night of the week for our family to eat a meatless meal as it tends to be more budget friendly as well as a friendlier option for the environment. My meat and potato eating husband tends to go along with this idea because I also make him a yummy dessert in addition to his meatless meal. What can I say? I’m nice like that!
Tuesday: Grilled Chili Lime Steak Fajitas. One of my favorites that we haven’t had in far too long. Love the chili lime flavor in this recipe. So good!
Wednesday: Thai Chili Peanut Meatballs. A request from my six year old. So easy, she can even help make it!
Thursday: Bridge Brunch Casserole. I must have breakfast on the brain this week. Love that this one can be prepped ahead and just popped in the oven come dinner time.
Friday: Pizza. Nothing kicks off our weekend like pizza! It’s a great opportunity to clean out the fridge and/or put our weekly CSA box to use. My Perfect Pizza Crust is always the base, no matter what ingredients go on top.
