who knew that posting my weekly menu here would hold me more accountable? go me. another busy week, but that’s about every week around here. with the girl eating anything that we eat for dinner, it doesn’t really matter if i’m planning to feed two of us or all three. here’s what this week’s menu is looking like :
monday : chicken and dumpling soup. oh my, that photo is horrid. one of andy’s favorites as well as mine. trying it a bit differently this time by giving it a go in the crockpot. the girl gets rather antsy around dinner time so we’ll see what happens.
tuesday : black bean tostadas with corn relish. my vegetarian meal for the week. looks yummy – although likely even yummier if i had access to summer produce.
wednesday : leftovers. or perhaps mcdonald’s after swim lessons?
thursday : pasta fagoili soup. my mom loves this at the olive garden, so i really did laugh out loud when i ran across the recipe. it’s definitely soup weather this week!
friday : autumn sausage casserole. i remember how good this was the last time…
new recipe review from last week :
marinated grilled chicken with couscous tomato salad. really tasty + super easy. that definitely equals a winning combination in my book! i do admit i had to laugh watching the girl eating her couscous with the mint and everything. i’m guessing it’s not normally on the typical toddler menu in most households. love that she’s not a picky eater.
crockpot cranberry pork roast. i made this for saturday’s dinner while andy’s parents were visiting. it’s always so nice to have dinner cooking itself in the kitchen while enjoying spending time doing something else. especially when you have visitors! i put this in while i was feeding the girl breakfast and it was ready by dinnertime. everyone loved this. i loved that i had everything in the house already. i might actually double the amount of the ingredients used as the sauce as that is what made the dish. i’ll also note that i made it using fresh cranberries. or rather frozen ones from the freezer as i stock up during the holidays to last me the rest of the year. did you know you can freeze cranberries for a year?
