just when i think i have a weekly menu full the brim of great meals, more things pop up onto the schedule. oh well, they’ll be saved for another week, right?
monday : sweet potato chili. taking a stab at my version of this for my meatless supper recipe for the coming week. so it’s guaranteed to be on the recipe journal this week.
tuesday : tater tot casserole. something hearty and warm for a day that’s scheduled to be super rainy + grey. i’m going to fiddle with this recipe a bit this go round.
wednesday : marinated grilled chicken with couscous tomato salad. i didn’t get to this two weeks ago and it will be quick to whip up before meeting up with a friend later that night.
thursday : leftovers. i had another recipe scheduled for this day, but decided to save it try on andy’s parents when they visit this weekend…

asian peanut butter pork. don’t forget to squeeze some lime over your serving, that truly is key. upon first taste, i thought the flavors were a bit muddy. with the addition of the lime, it truly brightened things up. the girl really enjoyed it, surprisingly. and this makes LOTS. plenty for everyone for dinner + several leftover portions.
