It’s hard to believe that this is the last menu plan of 2014! In the next two months, I’ll not only be planning our weekly meals but also planning on meals that I can have stocked in the freezer and at the ready for after this baby arrives. Just 10 weeks to go which is absolutely crazy to try and comprehend!

Here’s what we’ll be eating this week:
Meatless Monday: Four Cheese and Spinach Stuffed Shells. A family favorite and the perfect cheesy dish to start our second week of Winter break. A salad and garlic bread are all you need to round out this meal.
I’ve selected Monday as a night of the week for our family to eat a meatless meal as it tends to be more budget friendly as well as a friendlier option for the environment. My meat and potato eating husband tends to go along with this idea because I also make him a yummy dessert in addition to his meatless meal. What can I say? I’m nice like that!
Tuesday: Slow Cooker Spicy Orange Beef. The girls have friends coming over in the morning so I hope to have dinner in the slow cooker before they arrive. It’s been too long since we enjoyed this recipe, so I’m already looking forward to it!
Wednesday – New Year’s Eve: Beer Cheese Fondue. Appetizers for dinner is the name of the game for NYE and this Beer Cheese Fondue is always on the menu. In fact, our 6 year old requests it on an almost weekly basis. Be sure to check out my other appetizer recipes for your New Year’s Eve celebration!
Thursday – New Year’s Day: Creole Pasta Soup with Cornbread Croutons. New Year’s Day is a day spent in pajamas and watching the Rose Bowl parade at our house. This year it also means watching our Tigers in the Citrus Bowl. A perfect day to stay inside with a comforting bowl of soup!
Friday: Pizza. No matter what toppings we choose, my Perfect Pizza Crust is always the base and the perfect way to kick off the weekend.
