Today marks the beginning of back to school and our regular routines post-holiday. And back to setting my alarm each night before bed. UGH. It’s been so nice not to have to get up at a specific time the last two weeks!
PLEASE NOTE: Beginning next week, my weekly menu plan will be posted Sunday morning instead of Monday. This will allow me to sneak in another recipe for you each week. My posting schedule will now include new recipes on Monday, Wednesday and Friday. I hope this also allows you some extra time to plan your own menu and grab the necessary ingredients prior to the beginning of the week!
Here’s what we’ll be eating this week:
Meatless Monday: Slow Cooker Lentil and Brown Rice Tacos. One of my most popular recipes last year and one of our absolute favorites. Better for your grocery budget than the typical ground beef and absolutely full of flavor!
I’ve selected Monday as a night of the week for our family to eat a meatless meal as it tends to be more budget friendly as well as a friendlier option for the environment. My meat and potato eating husband tends to go along with this idea because I also make him a yummy dessert in addition to his meatless meal. What can I say? I’m nice like that!
Tuesday: Ravioli and Spinach Lasagna. Lasagna on a weeknight? Absolutely! With the temperatures dropping this week, I’m all about comfort food and this easy, cheesy lasagna definitely fits the bill!
Wednesday: Weeknight Chicken Paprikash. A local reader reminded me of this recipe after I posted my top recipes of last year. Love the flavors of this recipe and I’m sure you will too!
Thursday: Best Buttermilk Pancakes. Breakfast for dinner is a favorite of everyone! We’ve done waffles and french toast more often as of late, time to give our favorite pancakes a turn in the spotlight!
Friday: Turkey Tikka Burger with Mango Chutney Yogurt Sauce. Quite possibly the most moist and delicious burger you’ve ever tasted. And the Mango Chutney Yogurt Sauce? It’s pretty darn amazing!
