Here’s what we’ll be eating this week:
Meatless Monday: Slow Cooker Lentil and Brown Rice Tacos. We’re going to celebrate Cinco de Mayo a day early with our favorite – and beyond easy! – tacos.
I’ve selected Monday as a night of the week for our family to eat a meatless meal as it tends to be more budget friendly as well as a friendlier option for the environment. My meat and potato eating husband tends to go along with this idea because I also make him a yummy dessert in addition to his meatless meal. What can I say? I’m nice like that!
Tuesday: Chipotle Raspberry Chicken Enchiladas. Our Cinco de Mayo celebration continues! Love the sweet and spicy flavor combination of these delicious enchiladas.
Wednesday: Grilled Barbecue Bacon Meatloaf Sandwich. On of our absolute favorite sandwiches and perfect for a week with amazing weather in the forecast! Did I mention the runny egg on top?
Thursday: Honey Ginger Glazed Pork Tenderloin and Peaches. The glaze on this pork is out of this world. We often like to change things up by grilling nectarines or apricots instead of or in addition to peaches.
Friday: Taco Frito Flatbread Pizza. A copycat version of one of my favorite local pizzas. The perfect way to kick-off the weekend.
