Here’s what we’ll be eating this week:
Meatless Monday: Lemon Arugula Pasta. When arugula is in our weekly Door to Door Organics Delivery, this meal is must have! Super easy and always a hit with my 7 year old who requests it frequently.
I’ve selected Monday as a night of the week for our family to eat a meatless meal as it tends to be more budget friendly as well as a friendlier option for the environment. My meat and potato eating husband tends to go along with this idea because I also make him a yummy dessert in addition to his meatless meal. What can I say? I’m nice like that!
Tuesday: Cheeseburger Chimichangas. A twist on the typical burger and a bit easier for little ones to eat. More filling, less bun = winner in my book!
Wednesday: Chicken with Roasted Lemons and Green Olives. A second lemon dish for the week. Love the flavor the roasted lemons lend to this out of the ordinary chicken recipe.
Thursday: Easy Sloppy Joes. An adaptation of my grandmother’s recipe and always a welcome sight at our dinner table.
Friday: Honey Ginger Glazed Grilled Pork Tenderloin and Peaches. We’re kicking off the holiday weekend with an amazing grilled dinner. I wouldn’t blame you if you doubled the amount of peaches – they’re just that good!
