Here’s what’s on our family meal plan this week:
Meatless Monday: Lemon Arugula Pasta. My 7 year old requests this meal every week. So incredibly easy!
I’ve selected Monday as a night of the week for our family to eat a meatless meal as it tends to be more budget friendly as well as a friendlier option for the environment. My meat and potato eating husband tends to go along with this idea because I also make him a yummy dessert in addition to his meatless meal. What can I say? I’m nice like that!
Tuesday: Chicken Fajita Sheet Pan Dinner. Fajitas just got a whole lot easier thanks to a pan you already have in your kitchen.
Wednesday: Charred Kale Caesar Salad with Honey Chipotle Chicken. Typical Caesar salad need not apply when this mouth watering version is around!
Thursday: Bacon Tortellini Bake. Bacon and pasta FTW! Comfort food to get you through the rest of the week.
Friday: Creamy Hatch Chile Enchiladas. Hatch chiles are making their appearance and the time to make these enchiladas is now!
Breakfast: Strawberries and Cream Coffee Cake. One of our very favorite coffee cakes and perfect for summer as it’s full of strawberry flavor!
Dessert: Berry Cherry Crisp. Your fruit drawer called. It wants you to make this crisp recipe, stat.
