Here’s what’s on our family meal plan this week:
Meatless Monday: Southwest Quinoa Casserole. Why is it all of my favorite meatless meals tend to be Mexican? Here’s another one to add to the list!
I’ve selected Monday as a night of the week for our family to eat a meatless meal as it tends to be more budget friendly as well as a friendlier option for the environment. My meat and potato eating husband tends to go along with this idea because I also make him a yummy dessert in addition to his meatless meal. What can I say? I’m nice like that!
Tuesday: Easy Chicken and Dumpling Soup. Our family’s favorite soup. You know it’s good when it’s requested by your husband and more than one child!
Wednesday: One Pot BBQ Bacon and Chicken Pasta. One pot meals are perfect for the middle of the week when you’re losing steam and needing to get dinner on the table quickly and with minimal clean-up.
Thursday: Baked Orzo with Chicken. A simple and comforting dish. Two staples in our kitchen that come together as the perfect pair.
Friday: Mississippi Roast. I just picked up two roasts this week on sale and stashed them in the freezer and can’t wait to try this recipe.
Breakfast: New York Style Coffee Cake. Brunch anyone? I love making a coffee cake Saturday night for breakfast before church on Sunday.
Dessert: Double Chocolate Peanut Butter Chocolate Chip Cookie Dough Cake. Best. Cake. Ever. For real. No other description will do.
