This Barbeque Chicken Hash brings the taste of summer indoors and will be on the table in less than a half hour with the help of Ore Ida diced hashbrowns.

I’ve been a long time fan of these Ore Ida diced hash browns as they’re a great recipe shortcut. These were easily found in the freezer section at Walmart and were sporting adorable Frozen packaging. Ingredients
- 1/2 tablespoon olive oil
- 4 cups boneless, skinless chicken breasts, chopped
- 1 large onion, chopped
- 1/2 cup celery, chopped
- 1/2 cup green pepper, chopped
- 32 oz. Ore Ida Diced Hashbrowns
- 3/4 cup water
- 3/4 cup barbecue sauce
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 3 cloves garlic, minced
- 1/4 teaspoon salt
- 1 cup sharp cheddar cheese, shredded
- 1 jalapeno pepper, seeded and minced
Instructions
- Preheat oven to 375 degrees.
- Heat oil in large cast iron pan or heavy skillet over medium-high heat. Add chicken and brown on all sides. Remove chicken and set aside.
- Add onion, celery and green pepper and saute 2 minutes. Add chicken and all other ingredients except for cheese and jalapeno and bring to a boil. Reduce heat and simmer for two minutes.
- Bake for 10 minutes. Sprinkle with shredded cheese and jalapeno and bake an additional 5 minutes or until cheese melts.
The jalapeno garnish lends a great finishing touch to this dish. Because it’s minced finely, heat really isn’t a factor. It makes the hash look so pretty!
