This Orzo and Black Bean Salad is the true definition of a chameleon. It’s delicious warm or cold and is fantastic as a main dish or a side dish. Win, win, win, win. I love making it at the beginning of the week so that I have a quick and easy go-to lunch sitting in the fridge and all I have to do is open the door to enjoy!

The perfect accompaniment to any meal or as the actual main dish itself. It’s perfect alongside my Slow Cooker Mexican Beef Stew, Mexican Beer Cheese Fondue and even my Slow Cooker Honey Mustard Pork Tacos with Candied Bacon.
Orzo and Black Bean Salad
Ingredients
- 1 cup whole grain orzo
- 2 teaspoons extra virgin olive oil
- 8 ounces mushrooms sliced
- 1 bunch green onions thinly sliced
- 1-1/4 cups frozen corn
- 15.5 ounces black beans rinsed and drained
- 1 lime
- 2 avocados
Instructions
- Prepare orzo following directions on package. Put in large bowl.
- In large skillet, heat olive oil. over medium-high. Cook mushrooms, stirring occasionally until golden brown, about 5 minutes. Add to bowl. Add green onions, corn and black beans to bowl. Juice lime into bowl. Stir to combine. Season with salt and pepper.
- Halve, pit, peel and dice avocado.
- Serve salad in bowls topped with avocado.
Nutrition
I used a can of black beans from my pantry for this Orzo and Black Bean Salad, but you could definitely make them yourself as well using these Instant Pot Black Beans, Slow Cooker Black Beans or even using this tutorial on using dry beans.
