I could say it’s just a Winter thing, but there’s nothing quite like a comforting bowl of pasta. Especially cheesy pasta. No matter what the weather, I’m always ready for pasta. Luckily, our family tends to be as well and once a week we’re enjoying some type of noodle-y dish.
Two years ago after our son was born, a friend who also happened to be a resident’s wife brought dinner over so that I wouldn’t have to worry about it. I state again for the record, there is nothing better than fixing a meal for a family that has a lot going on, whether it be a new baby or someone not feeling well. It’s one of my favorite things to do. My friend brought us a chicken recipe that was covered in spinach artichoke dip. And yes, it was as decadently delicious as it sounds!

Last week, I decided to surprise the menagerie with pasta for lunch and thoughts of my friend’s chicken recipe popped into my head when I spied this Artichoke Spinach Dip in my pantry. With just three ingredients and 20 minutes, I had the most amazing pasta dish plated and in front of four hungry mouths – mine included! Artichokes and spinach are blended with the distinct flavor of Romano cheese and then stirred into al dente pasta and perfectly browned pasta to create a delicious and effortless pasta dish.

Ingredients
- 1 pound pasta
- 2 tablespoons olive oil
- 2 pounds chicken breasts, diced into bite size pieces
- 12 ounces Robert Rothschild Farm Artichoke Spinach Dip
- grated Parmesan cheese, for garnish (optional)
Instructions
- Cook pasta to al dente according to package directions.
- Meanwhile, heat olive oil in large skillet over medium heat.
- Season chicken with salt and pepper and add to skillet, browning on all sides until cooked through.
- Stir in Artichoke Spinach Dip.
- Add cooked pasta to skillet and gently stir to combine. If sauce is too thick, add a few tablespoons of pasta water to reach desired consistency.
- If desired, serve topped with grated Parmesan cheese.
