With a newborn in the house again, getting dinner on the table each night has become an interesting balancing act. Catch the baby taking a cat nap in morning? I usually sneak into the kitchen to unload the dishwasher, chop vegetables or some other prep task that will cut the time I need to spend in the kitchen that night in half. It’s amazing how a few stolen moments here and there add up to equal a much more calm dinner hour!

This four ingredient Pepper and Garlic Tortellini Stir Fry comes together in just 20 minutes and is guaranteed to make hungry bellies happy. Refrigerated cheese tortellini and frozen stir fry vegetables – you definitely could substitute fresh veggies as well! – are the base of this easy main dish.
Once everything is cooked, a jar of Robert Rothschild Farm Pepper & Garlic Dip is stirred in to finish the meal. This organic, all-natural and gluten free dip includes red bell and jalapeño peppers mixed with apple cider vinegar, onions and garlic to create quite the flavor punch. And with minimal effort on my part!

Ingredients
- 20 ounces refrigerated tortellini
- 2 tablespoons vegetable oil
- 42 ounces frozen stir fry vegetables
- 13 ounces Robert Rothschild Farm Pepper & Garlic Dip
Instructions
- Cook tortellini per package directions until al dente. Drain and set aside.
- In a large pan or wok, heat oil over medium heat. Add vegetables and stir fry until swift tender.
- Add cooked pasta and dip and heat through. Serve immediately.
Even with four children who might not be on their best behavior during the dinner witching hour, this Pepper and Garlic Tortellini Stir Fry will save the day. Chopsticks not necessary, although they do add a great fun element to the meal!
