And just like that summer is over and the menagerie is back at school. Today marks the second day of school and three of my four are back in class. Our days are now spent getting ready for school, going to school and then coming home and getting ready for school the next day. Le sigh. That means quick and easy dinners with little prep work so that what little free time we have left in the days is spent doing something together and not figuring out what we’re going to eat at our next meal.
Enter my Slow Cooker Peach and Pepper Pork Chops.

With peaches at their peak and my fridge stuffed full of them, I decided to forego having them only as a snack or a sweet treat and instead make them the star of dinner. A five ingredient dinner that is flavor packed and perfect for these last days of summer. Dinner made in a slow cooker means no extra heat in the kitchen most of the ingredients are found with a quick raid of the fridge. Win, win, win.

Ingredients
- 6 pork loin chops
- 1 10.5-ounce jar Robert Rothschild Farm Hot Pepper Peach Preserves
- 6 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 red bell pepper, chopped
- 3 peaches, sliced
Instructions
- Place pork loin chops on bottom of six quart slow cooker.
- In a small bowl, whisk together preserves, garlic, salt and pepper. Pour over pork.
- Add red pepper and peaches on top of pork.
- Cook on HIGH 4 hours or LOW 8 hours.
Notes
After removing pork chops from slow cooker, transfer cooking liquid to saucepan and heat over medium heat. In a small bowl, whisk together 1 tablespoon cornstarch with 1 tablespoon water. Add to cooking liquid and whisk together until thickened to create a glaze.
