Not only have we been back in the routine of school days for the last week and a half, but we’re also adding in activities for our menagerie as well. The eight year old is set to join a swim team this week and the four year old has started rock climbing. I’m feeling very Coloradan just typing that last part. The constant juggling of schedules means that dinner needs to be fast and easy so that we’re not tempted to hit a drive thru on the way home from practices. I’m sure that you’re nodding your head in agreement on that one, right? If so, my Pineapple Beef Stir Fry not only falls into the fast and easy categories, but it also is full of fresh vegetables and bright pineapple flavor.
One of my favorite parts of this recipe is that it can really be prepped in advance. I love to do everything earlier in the day so that when dinner time rolls around and we’re just walking in the door, it’s only minutes until we’re sitting down to something filling and delicious. While my two littlest are eating lunch, I’m chopping vegetables and slicing steak. Everything can then be placed in the fridge, where I can easily pull it back out when I’m ready to start dinner.
But prepping vegetables and slicing steak in advance isn’t the only shortcut that makes this Pineapple Beef Stir Fry weekday dinner ready. I also upped the pineapple quotient by taking some help from my friends at Robert Rothschild Farm and their Roasted Pineapple & Habanero Sauce. With roasted vegetables and pineapple and a hint of mango, it not only acts as a quick marinade for the beef but also as a finishing sauce for the entire stir fry. It’s one ingredient that packs twice the punch!

Ingredients
- 2 pounds beef top sirloin steak, sliced
- 12.7 ounces Robert Rothschild Farm Roasted Pineapple & Habanero Sauce
- 3 teaspoons olive oil, divided
- 6 carrots, sliced on the diagonal
- 2 onions, halved and sliced
- 2 green peppers, julienned
- 1 cup snow peas
- 3 cups diced fresh pineapple
Instructions
- in a ziptop bag, add steak and Roasted Pineapple & Habanero Sauce. Place in refrigerator and allow to marinate for 15 minutes.
- In a wok or large skillet over medium-high heat, add 2 teaspoons oil. Remove and reserve excess sauce from beef and add beef to wok. Stir fry until beef is no longer pink. Remove from wok with slotted spoon and set aside.
- Add remaining 1 teaspoon of oil to wok, along with carrots and onions. Stir fry for approximately five minutes or until crisp tender.
- Add green peppers and snow peas and stir fry for an additional 3-4 minutes or until vegetables have reached desired tenderness.
- Add reserved Roasted Pineapple & Habanero Sauce, beef and pineapple to wok and heat through.
- Serve stir fry over rice.
