Happy Taco Tuesday, my friends! Although I honestly can’t say that without thinking of the Lego Movie. Proof that my four year old son has requested it for movie night one too many times. I’m sneaking these Slow Cooker Hoisin Chili Chicken Tacos in just under the wire.
My days are now flooded with basketball practices, swim practice, rock climbing classes, volunteering at the girls’ school and anything else that is thrown my way. It’s absolutely slow cooker season as I attempt to get dinner on the table for the six of us without hitting a drive-thru instead.
What is Hoisin Sauce?
Not familiar with hoisin sauce? Hoisin sauce is a sweet, spicy, dark red sauce made from soybeans, vinegar, sugar, garlic, and various spices, widely used in southern Chinese cooking.
What Does Hoisin Sauce Taste Like?
Many people think it tastes similar to barbecue sauce. I can definitely see the resemblance but I think that hoisin sauce is much saltier, richer, less sweet, and has a flavor all its own. Totally family friendly as my kids enjoy the flavor of it, too!
In one meal, our family of six consumed 17 – SEVENTEEN! – of these Slow Cooker Hoisin Chili Chicken Tacos. If that isn’t a ringing endorsement that you need to be running to the kitchen to get these on your dinner table, I don’t know what is!
This recipe is easy enough that I started it between basketball games last weekend and came home to enjoy it after the second game of the day. So incredibly easy. One of those toss everything into the slow cooker and call it done. Who doesn’t love those type of recipes?
I obviously do as I’m no stranger to slow cooker taco recipes! My Slow Cooker Lentil and Brown Rice Tacos are one of my absolute favorites and my Slow Cooker Honey Mustard Pork Tacos with Candied Bacon is like having all the good things wrapped up in a single tortilla. Total winner.
These Slow Cooker Hoisin Chili Chicken Tacos are an amazingly easy weeknight meal and the perfect way to keep Taco Tuesday the best menu of the week. Blistered corn tortillas are wrapped around succulent, Asian barbecue spiced chicken and a crunchy cabbage and carrot slaw. Make dinner even easier by letting everyone assemble their own at the table!
How to Make Slow Cooker Hoisin Chili Chicken Tacos
[1] Add chicken to the insert of a six quart slow cooker.
TIP: I like to make this recipe in this slow cooker – it comes in 4, 6 or 8 quart options – or using the slow cooker function of my Instant Pot. If using your Instant Pot, you’ll want to use the tempered glass lid instead of the top that comes with it and is used for pressure cooking.
[2] Add hoisin sauce, chili sauce, soy sauce, ginger and garlic to slow cooker insert.
[3] Cook on LOW for 4 hours.
[4] Remove chicken to cutting board to shred and return to slow cooker. Cook on HIGH for 30 minutes uncovered to reduce liquid.
[5] Meanwhile, in a large bowl, add Napa cabbage, red cabbage, carrots, vinegar and sugar.
[6] Toss ingredients together to combine.

Slow Cooker Hoisin Chili Chicken Tacos
Ingredients
- 3 pounds boneless skinless chicken breasts
- 1 cup hoisin sauce
- 1/2 cup sweet chili sauce
- 1/4 cup soy sauce
- 2 tablespoons grated fresh ginger
- 8 garlic cloves minced
- 2 cups shredded Napa cabbage
- 2 cups shredded red cabbage
- 1 cups matchstick carrots
- 8 tablespoons rice wine vinegar
- 2 teaspoons sugar
- corn tortillas
- cilantro to garnish
Instructions
- Add chicken to the crock of a six quart slow cooker.TIP: I like to make this recipe in this slow cooker – it comes in 4, 6 or 8 quart options – or using the slow cooker function of my Instant Pot. If using your Instant Pot, you’ll want to use the tempered glass lid instead of the top that comes with it and is used for pressure cooking.

- To serve tacos, warm tortillas and layer with cabbage slaw and chicken. Garnish with fresh cilantro, if desired.
