In our Christmas letter last year, and said that 2017 was going to be my year of the cocktail. A bit ironic as I have four small children, but we’re going with it. I asked for a few bar tools for holiday gifts and then I was on my way. I’ve made a handful of drinks but this Grapefruit Mojito has completely stolen the show. It’s light, refreshing and not cloyingly sweet. It’s also the reason the grocery delivery guy has likely figured out what I’m up to thanks to the large volume of mint and limes I continue to order.
We were lucky enough to have family come through town this past weekend and before dinner, I asked if anyone would be interested in a round of Grapefruit Mojitos and they agreed. I was planning on them and was glad they said yes! That was until they mentioned that their brother-in-law was a bit of a cocktail expert. They had this novice shaking in her proverbial boots. But then they had their first sip and exclaimed it was delicious. WHEW! We loved sipping on them while noshing on chips, my Easy Roasted Vegetable Salsa and guacamole before dinner.
I’ve always loved the crisp and refreshing taste that grapefruit lend to a recipe, as evidenced by my Honey Roasted Grapefruit Parfait Popsicles and Strawberry Grapefruit Smoothies. They do the same thing with these mojitos!

Served over ice and garnished with fresh fruit and additional mint, I deem this the perfect Spring cocktail!
Simple syrup, you say? If you aren’t familiar with this ingredient, don’t fret! Simple syrup is simply a combination of equal amounts of sugar and water heated in a saucepan over medium heat until the sugar has dissolved completely. After it cools, you can store the liquid in the fridge so it’s at the ready whenever you’d like to use it. I love to make a large batch and keep it refrigerated in a mason jar as it’ll keep for three to four weeks. For one cup of simple syrup you’ll want to use approximately 3/4 cup of water and sugar.
These Grapefruit Mojitos are the perfect way to welcome the weekend. Even if it is only Tuesday! You now have plenty of time to make sure your bar is stocked and invite a few friends over. Cheers, friends!

Grapefruit Mojitos
Ingredients
- 2 limes quartered
- 0.66 ounces fresh mint
- 1 cup grapefruit juice
- 1 cup simple syrup
- 1 cup white rum
- 12 ounces club soda
- fresh grapefruit wedges and additional mint to garnish
Instructions
- Add limes and mint to pitcher. Using a muddler, extract juice from limes and bruise the mint leaves.
- Stir in grapefruit juice, simple syrup, rum and club soda.
- Strain and serve over ice, garnishing with fresh grapefruit and mint, if desired.
