In our house, Mojito Sunday has become a thing. While I’m making dinner, I make a mojito for both Andy and I to enjoy. We started with Grapefruit Mojitos and then Pineapple Mojitos and now, my love for a little bubbly joins the party with these Peach Prosecco Mojitos. If you’re looking for a signature cocktail for this summer, I think you just found it.

A pitcher of these Peach Prosecco Mojitos take just 10 minutes to make and I find the act of stirring them together almost cathartic. I’m in no rush and it’s a signal that I’m going to enjoy the waning minutes of the weekend before the schedule of the week begins again. A pitcher makes four mojitos which makes just enough drinks when we have friends over as well and of course the recipe can be easily doubled as well.

After taking a look at the recipe ingredients, if you aren’t familiar with this ingredient, no worries! Simple syrup is simply a combination of equal amounts of sugar and water heated in a saucepan over medium heat until the sugar has dissolved completely. After it cools, you can store the liquid in the fridge so it’s at the ready whenever you’d like to use it. I love to make a large batch and keep it refrigerated in a mason jar as it’ll keep for three to four weeks. For one cup of simple syrup you’ll want to use approximately 3/4 cup of water and sugar.

Peach Prosecco Mojitos
Ingredients
- 2 limes quartered
- 0.66 ounce package fresh mint
- 2 cups frozen peach slices
- 1 cup peach juice
- 1 cup simple syrup
- 1 cup white rum
- 12 ounces Prosecco
- additional frozen peach slices and mint to garnish
Instructions
- Add limes and mint to pitcher. Using a muddler, extract juice from limes and bruise the mint leaves.
- Stir in frozen peach slices, peach juice, simple syrup, rum and Prosecco.
- Strain and serve over ice, garnishing with frozen peach slices and mint, if desired.
