This Mexican Beer Cheese Fondue definitely has upped the spice quotient. If jalapeños make a cheese sauce delicious, I abide by the theory that a big handful of jalapeños would make it outstanding. And I’m not talking about the pickled variety. I’m talking fresh from the garden or produce aisle. While I love the spice, if you’re looking for a more mild fondue, you’ll simply want to remove the seeds and membranes from the peppers first as that’s where all of the heat is found.

Mexican Beer Cheese Fondue
This seven ingredient Mexican Beer Cheese Fondue comes together in just 20 minutes. Mexican beer, jalapeños, garlic and cheddar cheese are stirred together to create this melty, luscious dipping sauce that's just begging to be served at your next game day get together.
- 3 jalapeños sliced
- 4 garlic cloves minced
- 1 tablespoon butter
- 1 cup Mexican beer
- 4 cups shredded cheddar cheese
- 1 tablespoon flour
- 2-4 tablespoons half and half
In a small saucepan, sauté jalapeños and garlic in butter until tender.
Add beer to saucepan and bring to a boil; reduce heat to medium-low.
Toss cheese and flour together in small bowl; stir into saucepan until melted.
Add 2 tablespoons half and half to fondue and stir to combine.
Transfer to fondue to fondue pot and keep warm.
Add additional half and half if fondue thickens.
