If you follow me on Instagram, you no doubt noticed that I included a screenshot of last night’s weather forecast. Snow. It’s coming. Friday. I’m in complete and utter denial. I’m also not romanticizing the fluffy white flakes as I have done previously. You know, with our city not plowing snow and simply waiting for it to melt instead.
Give me a couple of years and maybe I’ll come around to this way of thinking. Instead, I’ve added buying snow tires for my car to my husband’s never ending to do list and I’ll be at home making a large pot of Creamy Tomato Bacon Soup.
Tomato soup with bacon? Oh, friends. Don’t hesitate to head to the kitchen or doubt my culinary ways. This Creamy Tomato Bacon Soup is the tomato soup of all tomato soups and should be at the top of your comfort food list as the weather turns colder and all you want to do is wrap your hands around a warm mug of soup.
Well, my two middle children love this soup in mugs, I still prefer a bowl. (Typical middle children in that they love to make things more difficult and insist on being different from everyone else.) The choice is yours, it tastes amazing whichever avenue you choose.

How Do You Make Tomato Soup from Scratch?
This ten ingredient Creamy Tomato Bacon Soup not only tastes amazing, but it also uses common ingredients already in your pantry and fridge. No special trips to the grocery store for fresh herbs, no clearing out your garden for the last of the summer tomatoes. This is the kind of tomato soup recipe that you want – strike that! – that you NEED in your proverbial recipe box.
Diced onions, bacon and garlic take a swim in melted butter before being joined with diced tomatoes, chicken broth and herbs. An immersion blender makes quick work of making everything a near smooth consistency before it’s all bathed in a shower of heavy cream.
The end result is nothing short of life changing. The bacon adds a bit of smokiness and hearty flavor to a somewhat traditional soup and definitely makes this Creamy Tomato Bacon Soup stand out from the crowd. At our house, we typically serve it with a grilled cheese sandwich on the side as it’s the perfect dipper.
Of course, if you have access to a bread bowl, you get the best of both worlds with an edible vessel as well. Top it with some freshly cracked pepper and some fresh thyme if you have some on hand. If you want to be a bit more decadent – and really, who doesn’t? – freshly grated cheese on the top is a great way to go.
How to Make Creamy Tomato Bacon Soup
[1] Add butter to a large dutch oven.
[2] Melt butter over medium heat.
[3] Add onion and cook until beginning to soften, about five minutes.
[4] Add bacon and garlic and cook for two minutes
[5] Add flour and stir until there is no dry flour remaining and mixture begins to darken.
[6] Add chicken broth and diced tomatoes.
TIP: Want to add even more flavor to your soup? Try substituting fire roasted tomatoes for the called for typical diced tomatoes.
[7] Stir until combined.
[8] Add thyme, bay leaves, salt and pepper and turn heat to low.
[9] Stir to combine and allow soup to simmer for 30 minutes.
[10] Remove bay leaves. Using an immersion blender, puree soup until no large pieces remain.
TIP: Don’t have an immersion blender? Instead, you can transfer your soup in small batches to a blender or food processor and puree to desired texture. You’ll want to insure you don’t fill your blender or food processor too full to avoid burning yourself – and making a huge mess!
[11] Stir in heavy cream and season with additional salt and pepper, if necessary.

- 2 bay leaves
- 2 teaspoons salt
- 1/2 teaspoon pepper
- 2 cups heavy cream
