Today we were supposed to have parent teacher conferences at the girls’ school. And I was supposed to bring four dozen cookies for the teacher’s workroom for them to be able to snack on over the next two days. Reese’s Pieces Chocolate Chip Cookies to be exact.
And then they cancelled school. We got close to 2″ of very wet, lake effect snow last night which brought trees down on power lines and over 45,000 people without power. Thankfully we weren’t one of them, but the school was.
So now said four dozen cookies sit in my freezer until they can be delivered tomorrow. It not only helps keep them fresh, but helps keep numerous pairs of hands out of them as well!
Four dozen cookies? No problem! The only thing I needed to grab from the grocery store for this chocolate chip cookie recipe was the Reese’s Pieces candies. Everything else you likely already have in your pantry and fridge.
I have used both regular Reese’s Pieces candy and the smaller sized baking pieces in this recipe, both with equally delicious results. I love pairing them with dark chocolate chunks for a truly decadent treat.
I’m no stranger to filling my cookie jar with chocolate chip cookies. Kit Kat Chocolate Chip Cookies. Salted Caramel Dark Chocolate Chip Cookies. Double Peanut Butter Bacon Chocolate Chip Cookies. But this classic peanut butter and chocolate chip combination? Well, it’s a classic for a reason.
These soft and chewy Reese’s Pieces Chocolate Chip Cookies are a peanut butter and chocolate lover’s dream. A traditional chocolate chip cookie base is overloaded with chocolate and candy to create a cookie you won’t soon forget.
The colors scream autumn which is what inspired me to create these in the first place. Pour yourself a glass of milk and reward yourself with a cookie fresh from the oven for a supreme treat.
Want your cookies to look like they came straight from a baker display case? Make them bigger! Instead of a medium cookie scoop, use a large cookie scoop and cook them for just a minute or two longer. They’ll be crisp on the outside and soft in the center and full of even more chocolate and candy.
I also love to add even more chocolate chunks and candy pieces to the top of cookies as soon as they come out of the oven to make sure they’re as pretty as possible.
Trust me, if you fill your cookie jar with these Reese’s Pieces Chocolate Chip Cookies, the only person that will be disappointed will be the one that discovers they’ve already disappeared.
Reese's Pieces Chocolate Chip Cookies
Ingredients
- 1 cup shortening
- 1 cup brown sugar
- 1 cup sugar
- 1/4 cup prepared hot coffee
- 2 teaspoons vanilla
- 2 eggs
- 3 cups flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1-1/2 cups chocolate chips or chunks
- 1-1/2 cups Reese's Pieces candy or baking pieces
Instructions
- Cream together shortening, brown sugar and sugar.
- Add coffee, vanilla and eggs and beat together until fluffy.
- Add flour, salt and baking soda and mix until just combined.
- Stir in chocolate chips and Reese's Pieces.
- Using a medium cookie scoop, form and drop dough onto parchment or silicone mat covered baking sheet.
- Bake at 375 degrees for 10-12 minutes. Allow to cool on cookie sheet 2 minutes before transferring to wire rack to cool completely.
