This Slow Cooker Blackberry Chicken is the answer to the ridiculous “What’s for dinner?” question you’re likely hounded with several times a week, if not a day. My three year old will ask me no less than five times in the hour before we eat what exactly I’ll be feeding her. I’m thinking of hiring an airplane to write our weekly menu in the sky. Surely that would keep her attention… Right?
When I say easy, I mean if you can crush fresh blackberries with the back of a fork, that’s all the manual labor that’s required for this flavor packed main dish.
Soy sauce, ginger and garlic lend a bit of an Asian flair. This is not your every day, absolutely ordinary chicken dish. No, sir!
And the garlic and ginger I mentioned? I made this slow cooker meal even easier by taking a shortcut!
As I’m usually putting dinner into the slow cooker as I’m getting breakfast for the menagerie and then getting us all out the door to school, I don’t have extra time to be mincing garlic and grating ginger. Enter Dorot Garlic and Herb Cubes. Natural, pre-measured, and pulled straight from my freezer.
Simply pop the frozen cubes of garlic and ginger into the slow cooker and call it a day. Bonus points for my hands not smelling like garlic at 7 am, either.

Ingredients
- 2 pounds boneless, skinless chicken breasts
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 12 oz. fresh blackberries
- 2 teaspoons ginger [2 Dorot cubes]
- 1 garlic clove [1 Dorot cube]
- 2 teaspoons soy sauce
- 1/3 cup brown sugar
- 1/2 teaspoon pepper
Instructions
- Add chicken to slow cooker and season with salt and pepper.
- Crush blackberries in bowl using the back of a fork and pour over chicken.
- Add ginger, garlic and soy sauce to slow cooker.
- Cook on LOW 4-6 hours.
- Serve chicken over rice and drizzle with cooking liquid.
- Garnish with fresh blackberries, if desired.
In case you didn’t notice, the juices of the blackberries will give your chicken a lovely purple hue, especially on the lower half that has been submerged in the cooking liquid. Before serving, I like to rotate the chicken to give it a bit more even coloring. I know it sounds crazy, but you eat with your eyes first. Right?
