Some of my most favorite recipes are those that have been passed along by family or friends. This recipe? Passed along to me years ago by my very first online scrapbooking friend. (Does that make me sound creepy?) Back in the day, pre-children, pre-blogging, I spent each evening documenting our memories in scrapbooks while Andy studied. Through a large scrapbooking website, I met Kate. We had so much in common and became fast friends. We now both of three children and don’t scrapbook near as much as we did previously but I value our friendship just as much.
My favorite thing to cook in a slow cooker? A beef roast. I love purchasing them when they’re on sale and then stash them in my freezer. This recipe quickly became one of our favorite ways to prepare a roast. Ten minutes of prep work in the morning makes for one amazing meal come dinner time. Easiest weeknight dinner ever!

I love serving it on a bed of mashed potatoes that helps to collect all of the delicious sauce as it drips over the side of the roast.

Ingredients
- 1-1/2 pounds chuck roast
- 2 onions, sliced
- 3/4 cup cola
- 1/4 cup worcestershire sauce
- 1/4 teaspoon ground red pepper
- 1 tablespoon vinegar
- 2 cloves garlic
- 1/2 teaspoon dry mustard
- 1/2 teaspoon chili powder
- 1/2 cup ketchup
- 2 tablespoons butter
Instructions
- Place roast in slow cooker and top with onions.
- In a small bowl, whisk together cola, worcestershire sauce, red pepper, vinegar, garlic, mustard and chili powder. Pour mixture over roast, reserving 1/2 cup to create sauce.
- Cover and cook on LOW for 10-12 hours or on HIGH 4-6 hours.
- In a small saucepan over low heat, stir together ketchup, butter and reserved liquid.
- Serve roast topped with sauce.
