If anyone were to ever ask me if I like pasta, I’d likely give them an eye roll and a smart aleck comment like, “Who in their right mind doesn’t LOVE pasta?” Friends, pasta is one of my absolute favorites. Such a comforting, always delicious meal. If I don’t have a meal planned, pasta is always an acceptable answer to the inevitable question of what are we going to eat. But forget heavy carb loaded meals more suitable for colder temperatures, I’ve lightened things up and even made pasta acceptable for breakfast!
