These large bakery style Triple Chip Cookies look like something you'd tell a barista to add to your usual morning drink order. Soft and chewy in the middle and crisp around the edges, these cookies are loaded with dark chocolate chunks, white chocolate chips and butterscotch chips.
In the bowl of an electric mixer, add shortening, brown sugar and sugar.
Cream together on medium speed until fluffy and combined.
Add eggs, coffee and vanilla to bowl.TIP: Not a fan of coffee? Neither am I! I promise you won’t taste it in your cookies, instead it simply deepens the flavor of the chocolate.
Beat together on medium speed until completely combined.
Add flour, salt and baking soda.
Mix on low speed until almost combined.TIP: You want to still see flour within the dough before the next step. This insures that you won’t overwork the dough resulting in a tough cookie.
Add chocolate chunks, white chocolate chips and butterscotch chips.
Stir together to combine, being careful not to over mix.
Using a large cookie scoop, form and drop dough onto silicone mat or parchment lined baking sheet, being sure not to crowd cookies.TIP: I love to use these precut parchment sheets when I’m baking to make my time in the kitchen super easy and less messy.
Bake for 12-14 minutes. Allow to cool on cookie sheet five minutes before transferring to wire rack to cool completely.TIP: Want to make your Triple Chip Cookies look like they came straight from a bakery? After your cookies come out of the oven, add additional chips to the top of each cookie.
