With a now four day weekend to enjoy thanks to scheduled parent/teacher conferences and non-scheduled lake effect snowstorm bringing down power lines near the girls’ school, I’ve been cooking like nobody’s business. I was telling Andy and his sister last night at dinner that it’s amazing how much time I had to get stuff done when I’m not shuttling people around to school and back home again.
The cooler weather appears to be here to stay so I’ve decided it’s time for soup! We’re big soup eaters even though it’s hard for little ones to eat soup and not create a complete disaster with sloshed broth and all. The girls can now eat soup with minimal mess, but I like hearty soups like this Slow Cooker BBQ Chicken Pizza soup as it has larger pieces that I can easily serve to Carson simply by using a slotted spoon instead of a ladle. Everyone eats the same thing at our house at each meal. Although I love to cook, I’m not a short order cook!

Ingredients
- 4 chicken breasts
- 1 red onion, diced
- 4 cloves garlic, minced
- 24 ounces frozen corn
- 1-1/4 cup BBQ sauce
- 8 cups chicken broth
- 1-1/2 teaspoons salt
- 1/2 teaspoon pepper
- 1/2 teaspoon garlic salt
- mozzarella cheese, cilantro and additional diced red onion, to garnish
Instructions
- In a 6 quart slow cooker, add all ingredients except for cilantro and mozzarella cheese.
- Cook on LOW for 5 hours.
- Remove chicken breasts and cube into bit size pieces. Return to slow cooker and stir to combine.
- Ladle soup into individual bowls and garnish with mozzarella cheese and cilantro to taste.
