I may or may not have a bit of a sweet tooth. I’ve shared with you my Peanut Butter Cup Stuffed S’mores Brownies and my Kit Kat Chocolate Chip Cookies so it was a no brainer to create a new dessert with another candy favorite. Butterfingers have long been one of my favorites so it was only logical that they jumped into my cookie jar to create these Butterfinger Oatmeal Chocolate Chip Cookies.
These aren’t my first Butterfinger and cookie combo. These chocolatey Mocha Caramel Butterfinger Cookies are already favorites of mine. And now it’s time for these Butterfinger Oatmeal Chocolate Chip Cookies to have their time in the spotlight. Loaded with oatmeal, chunks of candy bar and studded with chocolate chips, they’re a cold glass of milk’s perfect companion.
I’ve used both regular chopped Butterfinger candy bars and the prepackaged Butterfinger Baking Bits while testing this recipe, both with equally delicious results. I won’t like, you’re at an advantage if you’re chopping the candy yourself as it’s easy to make the pieces as large as you’d like. I love pairing them with dark chocolate chips for a truly decadent treat. Trust me, if you fill your cookie jar with these Butterfinger Oatmeal Chocolate Chip Cookies, you’re bound to gain accolades from family and friends.

Ingredients
- 1 cup shortening
- 1 cup sugar
- 1 cup brown sugar
- 2 eggs
- 1/4 cup hot coffee
- 2 teaspoons vanilla
- 3 cups flour
- 1 cup oats
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup chocolate chips
- 1 cup diced Butterfinger candy bar or Butterfinger Baking Bits
Instructions
- In the bowl of an electric mixer, cream together shortening, sugar and brown sugar.
- Mix in eggs, coffee and vanilla.
- Add flour, oats and baking soda and salt and mix until just combined.
- Stir in chocolate chips and Butterfinger.
- Using a medium cookie scoop, drop dough onto baking sheet covered with a silicone baking mat.
- Bake at 375 degrees for 10 minutes. Allow to cool on cookie sheet two minutes before transferring to wire rack to cool completely.
