If I mention butterscotch chips, what do you think of? Me? I’m instantly dreaming of Magic Cookie Bars, a favorite childhood treat. Whenever I spy them this ingredient on store shelves, that’s immediately what I think about.
The only downside to these treats is that they aren’t truly portable and, if I’m being honest, they’re quite hard to eat on the sly. I’ve taken care of both of these issues with these Magic Cookie Bar Cookies. All the deliciousness but without the need of a plate!
Can You Freeze Magic Cookie Bar Cookies?
I’ve transformed these magical bars into cookie form and filled my jar to the brim! The recipe makes four and a half dozen cookies but they also freeze well. Might I recommend putting half in your cookie jar to enjoy now and freezing the rest for a later cookie fix?
Or if you’re the sharing type, your friends, neighbors, teachers or postal worker would enjoy a dozen as well. From personal experience, I can absolutely confirm that they would.
Crispy on the outside and chewy on the inside, these Magic Cookie Bar Cookies are made in one bowl and prepared in just 15 minutes. Loaded with chocolate chips, butterscotch chips, coconut, pecans and graham cracker crumbs, these delicious cookies are guaranteed to disappear quickly.
Although completely unnecessary, I love to garnish these Magic Cookie Bar Cookies as they come out of the oven with additional chocolate chips, butterscotch chips, coconut flakes and graham cracker crumbs. The extra touch makes these cookies look and taste like they came straight from a bakery!

How to Make Magic Cookie Bar Cookies
[1] In the bowl of an electric mixer, add shortening, brown sugar and sugar.
[2] On medium speed, cream ingredients together until light and fluffy.
[3] Add eggs, coffee, vanilla and sweetened condensed milk.
[4] On medium speed, beat together until completely combined.
[5] Add flour, salt, baking soda, graham cracker crumbs and coconut.
[6] On low speed, mix together until just combined.
[7] Add butterscotch chips, chocolate chips and pecans.
[8] On low speed, mix together until just combined.
[9] Using a medium cookie scoop, scoop cookies onto parchment or silicone lined baking sheet.
Bake at 375 degrees for 10-12 minutes or until just golden and set.
[10] Immediately after removing from oven, garnish cookies with additional butterscotch chips, chocolate chips, graham cracker crumbs and coconut flakes.
Allow to cool 2-3 minutes on baking sheet before removing to cooling rack to cool completely.

Magic Cookie Bar Cookies
Ingredients
- 1 cup shortening
- 1 cup brown sugar
- 1 cup sugar
- 2 eggs
- 1/4 cup prepared coffee
- 2 teaspoons vanilla
- 14 ounces sweetened condensed milk
- 3 cups flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 cup graham cracker crumbs
- 1 cup unsweetened coconut flakes
- 1 cup butterscotch chips
- 1 cup chocolate chips
- 1 cup pecans chopped
- additional butterscotch chips chocolate chips, graham cracker crumbs and coconut flakes, to garnish
Instructions
- Preheat oven to 375 degrees.
- In the bowl of an electric mixer, cream together shortening, brown sugar and sugar.
- Add eggs, coffee and vanilla and beat until fluffy.
- Mix in sweetened condensed milk.
- Add flour, salt, baking soda, graham cracker crumbs and coconut and mix until just combined.
- Stir in butterscotch chips, chocolate chips and pecans.
- Using a medium cookie scoop, scoop cookies onto parchment or silicone lined baking sheet.
- Bake for 10-12 minutes or until just golden and set.
- Immediately after removing from oven, garnish cookies with additional butterscotch chips, chocolate chips, graham cracker crumbs and coconut flakes.
