Friends, these Huevos Rancheros Waffle Fries are a winner on so many levels it’s laughable! Perfect for anytime of day. Breakfast? Absolutely! Lunch? Sure thing! Dinner? You bet! A meatless dish that’s packed full of protein. And let us not forget that all of the amazing layers of flavor are stacked on top of a bed of waffle fries. WAFFLE FRIES! This is where I again remind my children that I’m sure their friends’ mamas are serving them meals such as this, as I try to earn cool points while I can. Although seriously, this meal is so easy, anyone can do it – no excuses!
Huevos Rancheros, a Mexican egg dish, is something I began making when our oldest was a baby and Andy would come home late from the hospital and I needed to make dinner quickly. It was inexpensive and it was filling. Win, win! Ironically, I’m not sure if I’ve ever made this dish for breakfast as I always seem to think of it come dinner time. We hadn’t had it in forever – as in at least in the last year since we moved to Cleveland – and I was ready to put a new twist on things. Enter my love of waffle fries. Forget the standard tortilla that usually acts as the base of this dish! Oh no, instead I baked up a batch of waffle fries and used them instead. So good! Especially if you cook the waffle fries so that they’re a bit brown and crispy and then you can use them like you would a chip in nachos and scoop up all of the yummy toppings at once. And don’t even get me started on how awesome the runny egg on top of this mountain of goodness is!
Not only did I switch things up by using waffle fries instead of tortillas, but I also ditched the traditional store bought salsa I typically use for something that packed more of a punch. With fresh tomatoes at their peak, I instantly grabbed a pint to use for this dish. A mix of yellow and red, they not only were delicious but gorgeous as well! I sauteed them with some onion and olive oil to thicken and then added some heat in the form of El Yucateco Red Habanero Sauce that I had found on a recent trip to Walmart. I love spice and this sauce was perfect! I noted in the recipe to use 1/2 teaspoon but depending on who you’re serving, you could easily add a full teaspoon or more to this dish. I love that instead of depending on having a jalapeno or other pepper in my fridge, I have this sauce in my arsenal instead. Huevos Rancheros Waffle Fries whenever I’d like!
A layer of crisp waffle fries acts as the base for these Huevos Rancheros Waffle Fries. They’re then topped with garlic scented black beans, cheddar cheese, eggs, a spicy fresh tomato salsa and green onions. It’s like bar food meets breakfast!
- 1 pound waffle fries
- 2 teaspoons olive oil
- 2 cups cherry tomatoes, halved
- 1 small onion, diced
- 2 cloves garlic, minced
- ½ teaspoon El Yucateco Green Habanero Sauce
- 15 ounce can black beans, drained and rinsed
- ¼ cup water
- ¼ teaspoon salt
- 8 eggs
- 1 bunch green onions, sliced
- 1 cup cheddar cheese, shredded
- Cook waffle fries according to package directions.
- Meanwhile, in a small skillet over medium heat, add tomatoes, onion, 1 clove of garlic and habanero sauce. Bring to a simmer and reduce heat to low.
- In another small saucepan, add beans, water, salt and remaining clove of garlic. Bring to a simmer and smash half of beans with a potato masher. Cook through until no water remains.
- Cook eggs according to personal preference.
- To assemble, place a handful of fries on a plate and top with black beans, cheese, two eggs and fresh salsa. Top with green onions.
