All of your favorite burger toppings and ground beef spiked with mustard and ketchup are rolled into a flour tortilla and baked until crisp. These crispy Cheeseburger Chimichangas are then placed on a bed of shredded lettuce and cheese before being drizzled with mayonnaise. Your eyes will think Mexican food but the taste is all-American!

If there’s one thing I’ve been craving these last 15+ weeks, it’s been burgers. Lots and lots of burgers. As in at the beginning of this pregnancy I was eating two a day. Couldn’t get enough. So similar to my last pregnancy and so different than the first two.

The problem with said burger craving? I don’t grill. That’s my husband’s domain. I prep, he grills. A winning combination. Except I can’t really expect him to be my beck and call griller. So I was left to my own devices to create a burger I could enjoy anytime, no matter who was at home. And just for good measure, I sent an invite to some onion rings for this burger party.

Except these burgers aren’t your typical burger. Cheeseburger Chimichanga anyone? All of your favorite burger toppings and ground beef spiked with mustard and ketchup are rolled into a flour tortilla and baked until crisp. The crispy chimichanga is then placed on a bed of shredded lettuce and cheese before being drizzled with mayonnaise. Your eyes will think Mexican food but the taste is all-American!
And those onion rings I mentioned? The perfect garnish to sit on top. If you want to add more than two, I won’t tell.

- 1 pound ground beef
- 2 tablespoons mustard
- ⅔ cup ketchup
- ¼ cup butter, melted
- 10 flour tortillas
- 1 cup onion, minced
- 1 cup tomato, diced
- 1 cup dill pickle slices
- 2 cups cheddar cheese, shredded
- 4 cups lettuce, shredded
- 8 ounces onion rings, prepared
- Preheat oven to 475 degrees.
- In a large skillet over medium heat, brown ground beef. Stir in mustard and ketchup until warmed through.
- To assemble tortillas, brush one side of each tortilla with butter.
- Add ⅓ cup beef filling to center of unbuttered side of each tortilla.
- Sprinkle onion and tomato over beef and top with 3 pickle slices.
- Fold two sides of tortilla over filling and roll to cover filling completely.
- Place in a 9x13 pan and continue until all chimichangas are complete.
- Bake for 15 minutes or until golden brown.
- To serve, create a bed of lettuce on a plate and top with shredded cheese. Place chimichanga on top.
- Drizzle with mayonnaise and top with onion rings.
So there you have it. My secret on how to make 10 cheeseburgers at once, in chimichanga form. A dinner that was well received by everyone around our dinner table. Little did they know the idea behind it’s creation was purely a selfish craving!
