I don’t know how my husband and I ever talked to each other during the day prior to texting. Oh that’s right, we didn’t. When he was in medical school and just had a pager, we had codes so that I could tell him hello or that I needed him to call me when he got a chance. Then there were the first few years of residency where the pager codes still worked but I wouldn’t be able to actually talk to the guy while he was at work – something like 5 a.m. – 10 p.m.
But now? BWHAHAHA. Now I send him messages like, “I just wrapped pork with more pork. Hurry home.” If I’m feeling extra devious, I send photos. Sure he might not read it for hours, but when he does, I’d like to think it puts an extra spring in his step to get the last details of his day done so he can get home for dinner. Even if it’s very late dinner and more what most would consider a midnight snack.
This Bacon Wrapped Cherry Merlot Pork Tenderloin was the subject of one of my most recent texts. Sure, it sounds a little fancy and it might even look like something you’d serve to guests, but in reality it’s one of the easiest meals. EVER. It also was enjoyed by each and every person around our dining room table. Our 2 year old? He had eaten his first piece before I had even taken my first bite. How’s that for a gold star review?
Pork tenderloin is seasoned with smoky mustard and salt and pepper before taking a twirl with numerous slices of bacon. It’s then roasted before being slathered with – my secret ingredient! – Robert Rothchild Farm’s Hot Cherry Merlot Dip. Subtle merlot wine is blended with cherries with just a bit of underlying heat from habanero peppers. In short, it’s pretty amazing. And combining the sweet cherries with a bit of salt from the bacon? Insanely delicious.
Bacon Wrapped Cherry Merlot Pork Tenderloin
Ingredients
- 2 1- pound boneless pork tenderloins
- 2 tablespoons Robert Rothschild Farm Anna Mae's Smoky Mustard
- 16 ounces bacon
- 13 ounces Robert Rothschild Farm Hot Cherry Merlot Dip
Instructions
- Preheat oven to 350 degrees.
- Place pork tenderloins on a rimmed baking sheet. Coat pork with mustard and season with salt and pepper.
- Wrap tenderloins with bacon slices, overlapping slightly, making sure ends are tucked underneath.
- Bake for 45 minutes.
- Remove pork from oven and spoon dip over the top of each. reserving some of the dip for serving.
- Return the pork to the oven and bake for an additional 15 minutes or until cooked through.
- Let rest for 10 minutes prior to serving. If desired, serve with additional dip.
