If I’ve said it once, I’ve said it a million times. There is absolutely no way we’d have dinner on the table if it weren’t for our weekly menu plan. With four little ones, dinner time is most definitely the witching hour. Everyone is hungry. Everyone is tired. Whatever I can do to make those last few hours of our days a bit less chaotic is always welcome!

Here’s what we’ll be eating this week:
Meatless Monday: Lemon Arugula Pasta. My 7 year old’s – I have a 7 year old?! – favorite meal and the one she requests most often. Lucky for me is that it’s easy enough you could prepare it blindfolded. You know, in case you needed an extra level of difficulty.
I’ve selected Monday as a night of the week for our family to eat a meatless meal as it tends to be more budget friendly as well as a friendlier option for the environment. My meat and potato eating husband tends to go along with this idea because I also make him a yummy dessert in addition to his meatless meal. What can I say? I’m nice like that!
Tuesday: Turkey Mac and Cheese Stir Fry. My husband isn’t a fan of mac and cheese – unless it’s my Bacon Crusted Beer Mac and Cheese – but he loved this meal and has requested it several times. It’s my kid friendly version of fried rice. Because really, little ones and rice equals a disaster come clean up time.
Wednesday: Taco Frito Flatbread Pizza. A knock-off of a pie from one of my favorite local pizzarias. Unfortunately their pizza that I love is only offered as a special one month a year so I had to take matters into my own hands! Now I can enjoy it whenever I want at home!
Thursday: Slow Cooker Spicy Orange Beef. Such an easy meal and one that’s always full of flavor. My slow cooker has always been loved but these days I’m giving it even extra attention as it makes life so much easier!
Friday: Pepper and Garlic Tortellini Stir Fry. Four ingredients and 20 minutes. That’s all it takes for this meal to come together. So easy to keep everything on hand and just pull this dish together when you need something pronto!

I’ve been craving ice cream all week and this one was a favorite from last summer. Such a tropical take on a brownie and ice cream combination as the lime is actually included in the brownie. So good!
