See ya, rice! You’ve been replaced by mac and cheese! Full of veggies and two sources of protein, this Turkey Mac and Cheese Stir Fry is a kid friendlier version of Turkey Fried Rice and sure to please anyone sitting around your dinner table.

I’ll be honest, I’m a bit of a stickler when it comes to eating at our house. If you don’t like what I’ve made for dinner, you’re required to eat one bite but if you’d rather not eat the rest, that’s your decision. Of course, that also means that I won’t be making you anything else and you’ll likely be hungrier than usual come breakfast time the next day. My philosophy is that sure you might not have cared for it the last time you tried it but maybe your taste buds have “grown up” a bit since then and you could really enjoy it now.
Lucky for me, my stance on not becoming a short order cook has worked to my advantage as everyone continues to try new foods and there are few that my children won’t eat.

If a recipe I serve doesn’t happen to be a hit with everyone the first time – even if I know it’s a winner! – it also means I don’t give up. Back to the drawing board I go! Case in point: turkey fried rice. Only one of my three children loved it, even though they like all of the ingredients that make up the recipe. So my thinking cap went on and I decided to put a new spin on things.

Enter Horizon Mac and Cheese. My children love mac and cheese and it’s indeed a treat at our house. Who am I kidding? I love mac and cheese, too! So instead of the messy and hard for children to eat rice in my original recipe, I substituted their beloved mac and cheese and transformed the dish into Turkey Mac and Cheese Stir Fry. Full of veggies and two sources of protein, lean ground turkey and eggs. And wouldn’t you know, the recipe was a success and got a thumbs up review all the way around. Even my husband who is – GASP! – not a fan of mac and cheese unless it’s my Bacon Crusted Beer Mac and Cheese, thought this was delicious.

Ingredients
- 1 tablespoon olive oil
- 4 eggs, beaten
- 1 pound ground turkey
- 2 bunches scallions, sliced
- 2 garlic cloves, minced
- 1 teaspoon ground ginger
- 2 cups matchstick carrots
- 1-1/2 cups frozen peas
- 3 tablespoons soy sauce
- 3 tablespoons rice wine vinegar
- 4 cups prepared Horizon Mac and Cheese, approximately two boxes
Instructions
- In a wok or large nonstick skillet, heat oil over medium heat.
- Add eggs to skillet and coat bottom of pan. Cook, without stirring, until almost set.
- Fold egg into thirds as if you were making an omelette and remove from skillet and place on cutting board. Cut into pieces approximately 1/2".
- Add turkey to skillet and cook until almost brown.
- Add scallions, garlic, ginger, carrots, peas, soy sauce and vinegar to pan and stir to combine.
- Stir in prepared mac and cheese.
