Not only are these Stone Fruit and Yogurt Popsicles loaded with fresh fruit but they also pack a protein punch. Mangos, nectarines and plums are blended together before being layered with honey sweetened Greek yogurt and frozen to create these sweet treats.
These Stone Fruit and Yogurt Popsicles are my ticket to reaching cool mama status. Literally and figuratively speaking. I mean, when I offer my children a popsicle for breakfast – BREAKFAST! – you know that heads or going to turn with a look of disbelief and then of complete appreciation. Little do they know, the joke is on them.
For the last four weeks, I’ve been receiving a weekly box of fruit and vegetables thanks to my new Door to Door Organics subscription. Each Tuesday, my box arrives on my doorstep and it’s a bit like Christmas. My three year old and I open the box and take everything out and spread it out on the counter to admire our new wares. I then prep whatever fruit and veggies need my attention before putting it all away in the fridge. It’s been such a positive change to have healthy food at the ready without any trip to the grocery store needed that I’ve upgraded to the largest box size.
We eat nearly every piece of fruit and vegetable in our order each week, but I’ve found a way to utilize any remaining fruit before our next box arrives. Popsicles! Why purchase the storebought variety laden with ingredients you can’t pronounce when you can not only make your own, but control the quality of ingredients used to prepare them as well.
Mangos, nectarines and plums are blended together before being layered with honey sweetened Greek yogurt. Not only are these popsicles loaded with fresh fruit, but they also pack a protein punch thanks to the yogurt. I also love the flecks of color swirled throughout thanks to blending the fruits whole, rather than peeling them.
These Stone Fruit and Yogurt Popsicles can be enjoyed any time of day, and believe me, I’ve done just that! Even better, nobody has to know that these layered beauties are actually good for you. It can be our little secret.
