Sure, these Beef Wellington Burgers aren’t meant to be handheld but they do welcome a side of fries with open arms! A puff pastry square is layered with salad greens and cheeseburger spiked with horseradish and Dijon mustard before being topped with mushrooms, tomato, french fried onions and a horseradish Dijion mayonnaise.

What do you serve your family for Christmas dinner? I made the decision after we had our first baby that I wasn’t going to make a large dinner. I love making an elaborate dinner, but save it for Thanksgiving. On Christmas, I want to spend the day with my family enjoying each other’s company and watching the menagerie open their gifts. Instead, we feast on spaghetti and meatballs. It’s easy, everyone loves it and if I’m on top of my game, the meatballs were prepared ahead of time.
But this year, I think I might’ve thought of a new holiday dinner idea…

Beef is the centerpiece of many holiday feasts. Premium roasts, such as Ribeye, Rib and Tenderloin are very popular at holiday time. However, more economical roast choices – Round Tip, Top Sirloin and Eye Round – are also delicious holiday options. I had to wonder what would happen if you take economical everyday ground beef and treat it as a premium cut? I decided to put a twist on a traditional beef dish and created Beef Wellington Burgers as a holiday dinner option. No beef tenderloin required! Comforting, easy to create, grocery budget friendly and really, who wouldn’t want fries served alongside their Christmas dinner?

Beef Wellington is a preparation of filet steak coated with mushrooms, onions and shallots, which is then wrapped in puff pastry and baked. Delicious, right? But, who has time to prepare something like that on Christmas day? Not I! Instead, I deconstructed this classic dish to make it just a bit more attainable by anyone wanting to give it a try. In all honesty, you might just have all the ingredients required already in your fridge or pantry.

Ingredients
- 2 sheets frozen puff pastry
- 16 ounces sliced baby Portabella mushrooms
- 6 tablespoons butter
- 2 tablespoons heavy whipping cream
- 2 pounds ground beef
- 2 tablespoons horseradish
- 2 tablespoons Dijon mustard
- 2 cups mixed salad greens
- 8 slices sharp cheddar cheese
- 2 roma tomatoes, sliced
- 2 cups french fried onions
- 1 cup mayonnaise
- 4 teaspoons horseradish
- 4 teaspoons Dijion mustard
Instructions
- Defrost puff pastry by allowing it to sit at room temperature for approximately 30 minutes.
- Preheat oven to 350 degrees.
- Cut each sheet in quarters for a total of 8 pieces. Place on parchment lined baking sheet.
- With a paring knife, score a border on each puff pastry square 1/2" from each edge, being careful to not cut through puff pastry.
- Bake puff pastry for 20 minutes or until lightly browned. Remove and set aside.
- Meanwhile, in a medium saucepan over medium heat, melt butter. Add mushrooms and cook until all moisture has been released. Add heavy whipping cream and cook until reduced. Keep warm.
- In a large bowl, combine ground beef, horseradish and Dijion mustard. Divide mixture evenly into 8 balls and form into patties.
- Preheat oven to 400 degrees.
- Spray a broiler pan with oil and place into oven and allow to preheat for five minutes.
- Remove pan from oven and top with burgers. Return to oven for 8 minutes.
- Remove pan from oven and flip burgers. Return to oven for additional 8 minutes.
- Remove pan from oven and each burger with a slice of cheese and cook until cheese is melted.
- In a small bowl, stir together mayonnaise, horseradish and Dijion mustard.
- Top the inner scored portion of each puff pastry square with salad greens and place burger on greens.
- Divide mushrooms evenly and place on each burger. Place tomato slice on each burger.
- Drizzle each burger with Horseradish Dijion Mayonnaise.
- Divide french fried onions evenly and place on top of burger.
