Do you change the way you eat during Lent? Living in Wisconsin for seven years, you’d see signs everywhere advertising Friday night fish frys. Friends, they are a BIG deal. It seemed like anyone and everyone hosted a fish fry at the end of each week. Although our family doesn’t change our dining habits during the Lenten season, these Shrimp Parmesan Sandwiches were devoured by everyone – including a deconstructed version for the baby!
These sandwiches are incredibly family friendly and takes the guesswork out of getting a meatless meal on the tale no matter what day of the week, but especially on a Friday during Lent. Spaghetti with marinara sauce, popcorn shrimp and mozzarella and Parmesan cheese are sandwiched between two pieces of crusty garlic bread.
Think about it… You love Chicken Parmesan, right? (I know you do, so many of you have fallen in love with my Slow Cooker Chicken Parmesan Sandwiches!) I’ve taken all the components of this popular dish and transformed it into a sandwich while also swapping out the chicken for popcorn shrimp. Instead of a breaded chicken breast topped with marinara and cheese and served with sides of spaghetti and garlic bread, I’ve simply taken the breaded shrimp, cheese and spaghetti and nestled it in between two slices of bread. Hello there, portable comfort food!
Shrimp is a fun and easy introduction to seafood for picky eaters – a likely reason why it’s America’s favorite seafood! In fact, most experts say that it can take introducing a new food as many as 10 times before a child will accept it and learn to like it. We have a “one bite rule” at our table where you’re required to eat one bite of everything on your plate. If you decided you don’t care for it, no worries, you can try it again the next time the dish shows up on our menu.
When I introduced SeaPak Popcorn Shrimp to my children the first time, I likened it to a chicken nugget – a totally kid friendly comparison. They instantly fell in love and since then almost always request additional shrimp on their plates when it is served. I love having adventurous eaters! You can also find this popcorn shrimp in my Shrimp, Bacon and Kale Parmesan Pasta and Honeyed Shrimp with Crispy Kale and Gorgonzola Grits.
Want to get dinner on the table even more quickly? If eating pasta earlier in the week, double the amount you’d normally prepare and save the leftovers for these Shrimp Parmesan Sandwiches. Dinner on Friday just got a whole lot easier. And more delicious!
