It seemed like anyone and everyone hosted a fish fry at the end of each week. Although our family doesn’t change our dining habits during the Lenten season, these Shrimp Parmesan Sandwiches were devoured by everyone – including a deconstructed version for the baby!
These sandwiches are incredibly family friendly and takes the guesswork out of getting a meatless meal on the tale no matter what day of the week, but especially on a Friday during Lent. Spaghetti with marinara sauce, popcorn shrimp and mozzarella and Parmesan cheese are sandwiched between two pieces of crusty garlic bread.
Think about it… You love Chicken Parmesan, right? (I know you do, so many of you have fallen in love with my Slow Cooker Chicken Parmesan Sandwiches!) I’ve taken all the components of this popular dish and transformed it into a sandwich while also swapping out the chicken for popcorn shrimp. Instead of a breaded chicken breast topped with marinara and cheese and served with sides of spaghetti and garlic bread, I’ve simply taken the breaded shrimp, cheese and spaghetti and nestled it in between two slices of bread. Hello there, portable comfort food!
Shrimp is a fun and easy introduction to seafood for picky eaters – a likely reason why it’s America’s favorite seafood! In fact, most experts say that it can take introducing a new food as many as 10 times before a child will accept it and learn to like it. We have a “one bite rule” at our table where you’re required to eat one bite of everything on your plate. If you decided you don’t care for it, no worries, you can try it again the next time the dish shows up on our menu.

Shrimp Parmesan Sandwiches
- 16 ounces spaghetti
- 26 ounces marinara sauce
- 2 20- ounce loaves of frozen garlic bread
- 12 ounces SeaPak Popcorn Shrimp
- 1 cup shredded mozzarella cheese
- 1 cup grated Parmesan cheese
- Prepare spaghetti according to package directions until cooked al dente and drain.
- Add pasta to large bowl and stir in half of marinara sauce.
- Prepare garlic bread and SeaPak Popcorn Shrimp per package directions.
- To assemble sandwiches, cut garlic bread into eight equal pieces.
- Top half of garlic bread slices with desired amount of spaghetti and dividing evenly, pour on additional marinara sauce over spaghetti or use desired amount.
- Divide mozzarella evenly and add to top of each sandwich. Repeat with shrimp and Parmesan cheese.
- Top each sandwich with remaining slice of garlic bread.
