This year I’ve definitely been in the spirit to share St. Patrick’s Day inspired recipes with you. Typically I might share one each year, but this year I’ve already shared three! I started with my decadent Grasshopper Ice Cream Tart and then followed with my Chicken Reuben Sheet Pan Nachos. Now I can’t wait to fill your your cookie jar with these Coconut Lime Sugar Cookies. Not only are they the requisite green color, but they also help to bring some tropical flavor to what has been a cold and snowy week. I definitely have spring fever!

These cookies were completely inspired by the Strawberry Sugar Cookies that everyone seemed to fall in love with last month. A few ingredient swaps – and of course a color change! – and they’re ready for a new holiday! Not only would they be perfect as a school class treat for St. Patrick’s Day, but they’re bright citrus flavor makes them suitable for baby and wedding showers that are certainly popular events in the spring. I must also admit they’re a cheery addition to your countertop cookie jar as well – even if they did disappear quickly!

These cookies get their signature green color and lime flavor from a favorite childhood pantry staple – Jello! The Jello powder is the perfect kitchen shortcut that allows these cookies to come together in just minutes. Sparkling with sugar and studded with coconut flakes, these cookies are definitely a welcome sign of spring.

Ingredients
- 1 cup butter, softened
- 1-1/2 cups sugar
- 6 tablespoons lime Jello powder
- 2 large eggs
- 3 cups flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 2 teaspoons cream of tarter
- 1/4 teaspoon salt
- 1 cup unsweetened coconut flakes
- 1 cup sugar
- additional unsweetened coconut flakes, to garnish
Instructions
- Preheat oven to 350 degrees.
- In the bowl of an electric mixer, cream together butter and 1-1/2 cups sugar until light and fluffy, 3-4 minutes. Add Jello powder and mix until well combined.
- Add eggs and mix for another 2 minutes.
- Add flour, baking powder, baking soda, cream of tarter, salt and coconut flakes and mix until just combined.
- Using medium cookie scoop , roll dough ball in sugar and place on parchment lined baking sheet.
- Bake or 10-12 minutes or until cookies begin to crack on the top.
- Allow the cookies to cool on the baking sheet for a few minutes, then transfer to a wire cooling rack and cool completely.
- Sprinkle with additional unsweetened coconut flakes, if desired.
Notes
If you'd like your cookies more puffy and chewy, bake as directed.
If you prefer your cookies to be more like traditional sugar cookies, simply press lightly on the balls of dough after arranging them on the cookie sheet prior to baking.

These Coconut Lime Sugar Cookies are absolutely divine straight from the oven while they’re warm and not quite set. What can I say? I’m a sucker for a warm cookie and have absolutely no willpower! They also made the perfect mid-afternoon treat when this mama was needing a quick pick-me-up to get me through the rest of the day.
