a week of favorites + two new recipes that i hope will soon become favorites. i rarely make the same dish twice so when i actually do make something again, you know it’s worth it!
meatless monday : cherry tomato + ravioli soup. one of our favorites and one that i frequently make for other families when they are in need of a meal. this soup is easy to make for the girls as i can serve it minus the broth on a plate for them and it turns into a pasta dish. thinking i might just have to make a loaf of bread to go with it.
i’ve selected monday as a night of the week for our family to eat a meatless meal as it tends to be more budget friendly as well as a friendlier option for the environment. my meat and potato eating husband tends to go along with this idea because i also make him a yummy dessert in addition to his meatless meal. what can i say, i’m nice like that.
tuesday : chicken tikka masala. didn’t get this one made last week but luckily still have all the ingredients on hand so we’ll give it another go this week!
wednesday : enchilada casserole. the meal i always request my mom to make for me whenever we visit. love that we’ll have leftovers for lunch, too!
thursday : country club chicken. a recent pinterest find. i love finding recipes i normally wouldn’t have run across from people i don’t even know. hoping it’s as delicious as it looks!
friday : shredded korean beef tacos. i made this once before and all of us enjoyed it. i had forgotten about it until just running across it again while making this week’s menu.

new recipe reviews from last week :
lasagna soup. yum! so much easier than making a traditional lasagna and just as tasty. the girls didn’t seem to be that enthralled with it – though it’s harder for them to enjoy soups – and andy ate his minus the ricotta concocation as he doesn’t care for it. will make again.
blueberry-orange cornmeal muffins. in the past few weeks, i’ve started making a baked good that we can enjoy on sunday morning before heading to church. i swear getting everyone dressed and out of the house is a feat in and of itself so taking something off my to-do list that andy can help get the girls settled with is working really well. these were the baked good this week, a recipe i had pulled from a recent issue of everyday food. while i enjoyed them, i’m not sure the girls enjoyed the the different texture the cornmeal gave them. then again, they also are dealing with colds so i could blame it on that as well. i enjoyed them enough myself to make again.
