after a few weeks off from going on a real grocery run and making a menu for the week, it’s nice to know that the pantry is stocked and there’s a plan in place for dinner.
meatless monday : lentil burritos. i have a feeling C will like this because there’s lots of rice in the filling. we’ll see what andy says… i’ve been wanting to start using lentils so this looks like a good first attempt. ironically L eats lentils every couple of days as i made a lentils + rice baby food for her.
tuesday : ravioli + spinach lasagna. i’ve been wanting to make these again as we all enjoyed them so much the first time. couldn’t be easier to throw together!
wednesday : thai chile peanut meatballs. my husband will be thrilled to see these on the menu. love being able to put everything together at breakfast and pretty much not lift a finger for the rest of the day regarding dinner.
thursday : chicken noodle soup. C has been requesting this on a daily basis. she’s even been making it herself in her play kitchen. i’m happy to oblige!
friday : pizza. there’s no better way to start the weekend.
