was so angry last week when the menu i had typed out and planned was nowhere to be found on my blog. grr. i usually plan everything on sunday and then the post goes up on monday. so hopefully this week we’ll be back on track!
meatless monday : minestrone soup. it’s getting cooler which means it’s time for soup. this is a new recipe but looks perfect for two reaons : [1] it’s meatless and [2] i already have everything in the house!
tuesday : asian bbq turkey lettuce wraps. dear, jamie – my husband should really thank you for sharing this recipe with me. he can’t look at lettuce without dreaming of these now. to make my life easier, i’ll be doubling the meat and freezing half for some other time. i’ve almost tweaked the original recipe to perfect in my book. hopefully this week i’ll snap a photo and put it up on melanie makes.
wednesday : bbq pulled pork sandwiches. technically it’s bbq two days in a row, but now really. tuesday’s meal is really asian and just has bbq sauce in it. just wanting to clear that up… remember how a couple of weeks ago i decided to make a 7 pound pork roast? i froze half of the meat for later. wednesday this week = later. add in some sweet potato fries from trader joes and consider your belly happy.
thursday : salsa chicken + black bean soup. all of us enjoy this one and it’s so nice to have everything cooking for you and no actual work to be done come dinner time.
friday : pizza. we *heart* pizza.
last week recipe reviews
chicken adobo. super easy to put together. i threw everything in the crockpot after we had come home from something that morning. i like that the carrots didn’t get all mushy. and bonus that we enjoyed the extra carrots on salads for dinner another night. C thought the carrots were spicy, although i think she just didn’t care for the flavoring the vinegar gave it. both andy and i enjoyed it the night we had it for dinner, but i wasn’t as fond of it as leftovers for lunch. not sure why?
spinach + ravioli lasagna. yum. yum. super yum. i’d take a piece right now, thankyouverymuch. super easy to put together. andy didn’t complain a bit that i used chicken sausage or that it contained spinach. it’s a homerun, i say! i love that when i finally got L down for a nap, it gave me just enough time to put this together. i then put it in the fridge while we ran a few errands. came back, took it out and plopped it in the oven. dinner perfection.
