happy to be back this week with a plan for meals. last week i was simply winging it as we struggled to get back to normal after a week of vacation and i was once again reminded of how much easier life is when i’ve planned what we’ll be eating for the week in advance!
meatless monday : chili. tonight’s monday night football game vetos meatless monday as andy requested chili. so we’ll simply be going meatless later in the week. the highs this week are in the low/mid 60s. sounds like a good time to start eating soup/chili! and although we live in the land of cheese, we’ll be cheering for the bears!
tuesday : autumn sausage casserole. i made this last year and we all loved it. a fabulous fall dish.
wednesday : asian barbecued turkey lettuce wraps. yep, andy’s other request this week. must mean that meatballs or tacos will be next week’s request. i made these on vacation and everyone seemed to enjoy it. i plan on doubling the dish and putting the extra in the freezer to simply warm in the crockpot for another dinner.
meatless thursday : cherry tomato + ravioli soup. i love this soup. LOVE. and it’s so easy. a perfect filling, meatless dish. think i’ll bake a loaf of bread to go with.
friday : pizza. always pizza.
