Here’s what we’ll be eating this week:
Meatless Monday: Slow Cooker Brown Rice and Lentil Tacos. The perfect Cinco de Mayo meal!
I’ve selected Monday as a night of the week for our family to eat a meatless meal as it tends to be more budget friendly as well as a friendlier option for the environment. My meat and potato eating husband tends to go along with this idea because I also make him a yummy dessert in addition to his meatless meal. What can I say? I’m nice like that!
Tuesday: Yogurt Waffles. I promised my daughter and her adoring aunt that I’d make them waffles for dinner this week. Then my daughter tried to con me into making french toast for breakfast and pancakes for lunch on the same day. There’s a reason we call her the carb queen!
Wednesday: Ravioli and Spinach Lasagna. I love that I can make our family lasagna on a weeknight without even a second thought. Easy!
Thursday: Apricot Basil Chicken Salad. It’s supposed to be 77 degrees on Thursday! Considering that we haven’t been able to get out of the 50s in forever, I know we’ll be spending the afternoon outside. This make ahead chicken salad will be awesome to enjoy on the patio!
Friday: Meatball Moscato Skewers. It’s National Moscato Day and these skewers are perfect as an appetizer or a main dish, perfect no matter how you choose to celebrate!
