Here’s what we’ll be eating this week:
Meatless Monday: Four Cheese and Spinach Stuffed Shells. One of my favorite meatless meals. Pasta, cheese, cheese, cheese and more cheese. The perfect beginning to a week, wouldn’t you agree?
I’ve selected Monday as a night of the week for our family to eat a meatless meal as it tends to be more budget friendly as well as a friendlier option for the environment. My meat and potato eating husband tends to go along with this idea because I also make him a yummy dessert in addition to his meatless meal. What can I say? I’m nice like that!
Tuesday: One Pan Spicy Lemon Chicken Pasta With Tomatoes. A new Pinterest find from Kristin at Yellow Bliss Road. A one pan meal is perfect for our first full week of summer vacation.
Wednesday: Taco Frito Flatbread Pizza. I’ve been craving this pizza for the last week and couldn’t get it on this week’s menu fast enough. I’m in love with the chipotle yogurt sauce!
Thursday: Garlic-Yogurt Baked Chicken. Another new recipe to try, this one from Katerina at Diethood. Love how yogurt tenderizes the chicken prior to baking.
Friday: Bacon Double Cheeseburger Pizza. My other current pizza love. The perfect meal to enjoy on the backyard patio to kick off the weekend.
