i was going to skip posting this this week, but since i’m having to plan it all out anyway, what the heck? please note that i don’t cook a “typical” holiday meal for christmas. we play it low key so that we can enjoy just spending time with one another. yesterday we opened gifts sent by my family and if it was any indication – christmas day looks like it will be f-u-n!
monday : black bean tostadas with corn relish. i haven’t made this again and it sounds good today – especially the avacados!
tuesday : turkey pot pie. i had cubed and frozen our leftover turkey from thanksgiving and want to put it to use! andy will be thrilled to see this on the menu.
wednesday : leftovers/out.
thursday : potato soup and cherry tomato + ravioli soup. andy’s parents and sister arrive on christmas eve, so this is an easy to put together meal that will feed a crowd. plus i’ll earn bonus points from andy’s sister about the potato soup…
friday : spaghetti + meatballs. easy and who doesn’t like it? especially the girl. i’ll be making the meatballs ahead of time as a holiday gift to my dear husband the meat eater.
new recipe review from last week :
cranberry roast. this was great. super easy to throw everything together and forget about it until dinner time. the girl even asked for another serving which i consider the highest compliment with anything meat related as it’s not always her favorite. she’s much more a veggie type of girl. i might have to buy some more cranberries this week to toss in the freezer to insure i can make this one year round.
