Well, it appears that Fall is here to stay in Cleveland. High temperatures in the 50s and rain every other day. Bring on the soups and slow cooker recipes, I say!
Here’s what we’ll be eating this week:
Meatless Monday: Potato Corn Chowder. Meatless, but hearty nonetheless. This chowder is a family favorite and takes minimal effort to prepare.
I’ve selected Monday as a night of the week for our family to eat a meatless meal as it tends to be more budget friendly as well as a friendlier option for the environment. My meat and potato eating husband tends to go along with this idea because I also make him a yummy dessert in addition to his meatless meal. What can I say? I’m nice like that!
Tuesday: Taco Frito Flatbread Pizza. A knock-off of my absolute favorite seasonal pizza from a local pizza place. Since they won’t give it a permanent spot on their menu, I’ve taken it upon myself to make it at home!
Wednesday: Slow Cooker Chicken Parmesan Sandwiches. Feeds a crowd which means leftovers for lunch! Bonus points for being a super easy meal to prepare.
Thursday: Slow Cooker Gingersnap Pot Roast. Fall weather screams for a pot roast. Especially when I can prep it during breakfast and it’s ready and waiting at dinner time.
Friday: Pizza. Any pie is guaranteed delicious when we start with my Perfect Pizza Crust recipe. Easy enough that the girls can help yet quick enough that dinner is on the table in no time.
