Here’s what we’ll be eating this week:
Meatless Monday: Citrus Chardonnay Cranberry Grilled Cheese. Your favorite sandwich is all grown up. An unexpected flavor combination that will have you coming back for more.
I’ve selected Monday as a night of the week for our family to eat a meatless meal as it tends to be more budget friendly as well as a friendlier option for the environment. My meat and potato eating husband tends to go along with this idea because I also make him a yummy dessert in addition to his meatless meal. What can I say? I’m nice like that!
Tuesday: Easy Baked Meatballs. I’ve got grand plans to put these meatballs on a mountain of pasta with a simple marinara sauce. Perfection.
Wednesday: Grilled Chili Lime Steak Fajitas. Fajitas are one of my hands down favorite meals and the chili lime sauce on this fajita filling is delicious!
Thursday: Skillet Stuffed Peppers. All of a sudden, my children now love mashed potatoes. After years of them balking at even the idea of them. Crazy, right? Love that these peppers have a bit of Mexican flair.
Friday: Pizza. We love to begin our weekends with pizza and on Halloween night, it’s the perfect quick meal to have on the table before heading out to fill our pumpkins with candy! No matter what toppings we choose, my Perfect Pizza Crust is always the base.
